recipe of the week: butterless brownies

you can actually use butter for this recipe but i didn't have enough...

1/2C vegetable oil or melted butter
1C sugar
1 t mint extract
2 eggs
1/2C all purpose flour
1/3C cocoa
1/4 t baking powder
1/4 t salt

preheat oven to 350 degrees, grease a 9inch square pan and coat in cocoa.
mix oil and sugar in large bowl, add mint and eggs.
mix, in seperate bowl, mix flour, cocoa, baking powder and salt.
sift the dry ingredients into the wet gradually and mix thoroughly after each addition.
pour batter into baking pan.
bake for 20-25 mins or until brownies start to come away from the sides.
cool completely in the pan on a wire rack.

i haven't actually tried the brownies yet as they have just come out of the oven. but smell and look tells me this recipe is a winner. if it's not, this post will magically disappear...

can you use olive oil instead of vegetable oil? can't wait to try the recipe!

i wouldn't use extra virgin olive oil in baking but maybe a mild olive oil could work like the 'extra light' varieties you can get in most shops. they don't have that over powering smell and flavour of the extra virgin varieties. i'm not really sure though as i've only used vegetable oils or butter when baking.

let me know what you used and how it worked out once you've made the brownies.

Extra virgin works just fine. I added vanilla instead of the mint and put in a pinch more than called for. My family loved them. Thanks for the recipe!

I used olive oil and vanilla as well... Delish!

Next batch I think I may incorporate some chocolate chips.

I made them the last week with vanilla and today with coconut extract and omg are they yummy! Today's taste like a mounds bar.

Great recipe! I used vanilla instead of mint and added an extra teaspoon of it for more flavour. Amazing results.
