recipe of the week: thyme mashed potatoes

5 large mashing potatoes, peeled
1 bunch lemon thyme
1/2C heavy cream
dollop of butter

boil the potatoes and most of the lemon thyme until the cooked through.
strip leaves from the remaining thyme stalks.
drain potatoes well and remove the thyme stalks.
mash the potatoes with cream, butter and reserved thyme leaves.
